Time to make mayo and/or salad dressings if you’re a DIYer/CIYer like I am. If you have trouble getting the consistency and you’re not afraid of egg yolks, add an extra yolk to the recipe for a thicker, smoother consistency. Chefs also add a little shallot, garlic and cayenne pepper, but use within the week - no preservatives! PS My go-to olive oil for mayo is Beritolli Extra Light Taste for not adding that funky taste that some oils do - usually available at WalMart
