Prepping healthy lunches has always been challenging for me so I thought I would try some of the make ahead lunches from the Whole 30 site. This one caught my eye! Chicken sausage salad Ingredients: - 1 package (~5 links) fully cooked chicken sausage. - 1 large, crunchy apple, like honeycrisp or pizzazz, diced. - 2 celery ribs, diced. - 1/2 cup mayo. - 1/4 cup pecans, chopped. - 1 tbsp apple cider vinegar. - 1 tbsp lemon juice. Directions: 1. Cut the chicken sausage into bite sized cubes, and add to a large mixing bowl. 2. Dice the apple and celery and add to the bowl. 3. Add the remaining ingredients (mayo, pecans, ACV, and lemon juice) and stir well.
