Easy Whole30 Taco Salad

Taco salads are one of my main go-to's for a quick and easy meal. It makes for a super easy meal prep and it is so easy to customize and switch up whenever you would like.


I like to batch cook the taco meat using two pounds of ground beef. You can use it the night you make the salad and then again in the morning for a taco-egg scramble. You could feed a large family with it, or eat it multiple nights in a row. This salad seriously never gets old. Sometimes we will eat it every week, and it is my go-to when I'm not sure what to make for dinner.


In addition to the taco meat, I will also prep roasted sweet potatoes. I cut the sweet potatoes into bite-sized pieces and then roast them, so they are perfect to add to the salad. They also go perfectly with that taco-egg scramble I mentioned above!!


I use multiple Whole30 approved brands when making this salad, but you could use any brand you like, but to keep it Whole30 compatible, make sure to read the labels!


My go-to's are Siete Taco Seasoning, Tessemae's Habanero Ranch, and Zia Hatch Green Chile.



Meat:

To make the meat I use Siete Spicy Taco Seasoning. I keep a huge stockpile of this stuff. When I see it on sale at Whole Foods I always stock up because I seriously use it that much. I think that it is the best-tasting taco seasoning I have ever had! It can be used on a variety of proteins but I always use ground beef. Just cook according to package directions. You could also use any other type of meat or seasoning you would like!


Sweet potatoes:

I use 2-3 medium sweet potatoes, chop them into bite-sized pieces, and roast. I give them a good drizzle of avocado oil, (about 1 tablespoon) and season with garlic powder (1/2 a teaspoon) and a pinch of salt and pepper. Then put them in a 400-degree oven until fork tender.

My favorites are:

Tomatoes

Red onion

Black Olives

Avocado

Hatch Green Chile

(I love Zia brand of Hatch Green Chiles. They are Whole30 approved and add some serious flavor!)


I encourage you to get creative with your toppings! Add whatever you have on hand or your favorites!


To assemble:

First, add in a generous about of your favorite mixed greens, add in seasoned meat, sweet potatoes, and your favorite toppings. Next, give it a good drizzle of ranch dressing. Tessemae's Habanero Ranch is incredible in this salad, but if it's too spicy for you then regular ranch will also do the trick.
