Whole30 Bacon Jalapeño Poppers

Jalapeño Poppers are one of my all-time favorite appetizers, and when I discovered that dairy wasn't my friend, I knew I HAD to try a dairy-free version of these. The biggest thing was finding a nut-based cream cheese that didn't have a weird texture or flavor. I have to admit that vegan cheese isn't always the best and it can have a bad reputation, but there really are some great ones out there! My absolute favorite vegan cheese brand is Miyoko's Creamery. They make cashew milk cheeses that are so amazing, they do not have a funky flavor or texture! Some of their products are even Whole30 compatible! (But remember, always read your labels!) For this recipe, I would recommend using the classic plain flavor, or the savory scallion. Both of these flavors are Whole30 compatible.
The recipe only has 3 ingredients and is very simple to assemble. I recommend using a wire baking rack, although you would be okay without it, it helps get the bacon crispy all the way around the jalapeño.
