Watermelon, Pistachio & Feta Summer Salad



This summer salad is soooo good and also so incredibly easy to make. It's honestly not even a real recipe because the measurements do not need to be exact at all. It is perfect on a hot summer day when you don't want to cook.


My secret ingredient here is The New Primal Citus Herb Seasoning. All the salad needs is a few shakes for major herby flavor. This seasoning is my absolute favorite to add to any, and all, salads!

You'll notice that almost all my recipes are dairy-free, and that is because I, myself, do not consume dairy. I learned from one of my first rounds of Whole30 that dairy does not sit very well with me, so I made the decision to cut it out (unless it's something really worth it!) I have learned through experimentation that feta made from sheep's milk does not upset my stomach like cow's milk does. So I like to add a little feta to my life every once in a while! I like to get the authentic Greek feta that comes in brine from Trader Joe's. This feta comes as a brick, not the stuff that comes pre-crumbled. It's so creamy & so delicious!


So now for the salad. Trust me, you're going to want to make this one!!

 

Ingredients:


  • 2 handfuls of arugula

  • Diced Watermelon

  • Diced red onion

  • A small handful of pistachios de-shelled and chopped

  • Sheep's milk feta

  • Drizzle of olive oil

  • Drizzle of red wine vinegar

  • A few shakes of The New Primal Citus Herb Seasoning

Throw all the ingredients together! That's it!!

Note: This could easily be made paleo, dairy-free, and Whole30 by eliminating the feta! It would still be a super tasty & easy salad! Throw some chicken on there for some protein and you're good to go.
