Oomph Mushroom Scalloped Potatoes
Whole30 - Paleo - Gluten-Free - Dairy-Free - Sugar-Free
This dairy-free version of scalloped potatoes gives you all the creamy-potato-yumminess you would expect! The mushrooms from the Oomph blend in the sauce gives it a yummy earthiness that goes so well with the Yukon gold potatoes. It is the perfect side dish for any meal, especially around the holidays!
I had the amazing opportunity to collaborate on a Holiday e-Cookbook with Whole's approved partner Oomph along with a few other Whole30 Coaches to create holiday recipes using their product. If you don't already know what Oomph is, it is dehydrated and milled vegetables turned into flavor combinations to add to your cooking. They add nutrition and super easy flavor to your meals! For this recipe, I used their limited edition holiday blend, Herby Duxelles. But, you can also use the original No.1 Duxelles blend any time of the year!
I also used another approved Whole30 brand, Nutpods in this recipe. Nutpods is dairy-free coffee creamer. I know this sounds weird, but stay with me here... The original flavor can be used like you would half-and-half. I love using the Original flavor in cooking because it doesn’t really have a distinct flavor to it and won’t alter the flavor of the dish. You'll have to trust me on this one!
For this recipe, I used a mandolin slicer. This really helps to get the potatoes thin and also uniform in slices. You could use a knife for this, but having a mandolin in your kitchen is super handy! I highly recommend getting one. But please. PLEASE be careful with the mandolin and use the safety features. They are there for a reason. It only took one nice slice out of my finger for me to listen to that advice. Don't be like me and learn the hard way!
