Jalapeño Popper Stuffed Mushrooms
Whole30 - Paleo - Gluten-Free - Dairy-Free - Sugar-Free
These mushrooms are sure to be a crowd-pleaser. They are Whole30 AND dairy-free, but I honestly do not think you can even tell the difference. They are great for an appetizer for any occasion! These mushrooms are creamy, have just the right amount of spice, and have a bread-crumb-like texture from the almond flour and mushroom steams.
For this recipe, I used my favorite brand of Whole30 approved avocado oil mayo, Primal Kitchen. I get a big jar of it from Costco and as someone who doesn't eat dairy, I use it pretty often. It's a great substitute to add in creamy dairy-free goodness. I know you may think I'm crazy, but trust me on this one and give it a try!
Finding a Whole30 compatible bacon can sometimes be a little tricky. I am grateful for the Whole30 approved brands that take the guesswork out of it, such as Applegate or Nature's Rancher. When you see the Whole30 approved logo on the package you know you are good to go. However, there are many Whole30 compatible brands out there as well, such as at Trader Joe's or Costco. As with everything else, you want to be sure to read your labels. When looking for a Whole30 compatible bacon you want to be sure it is nitrate and nitrite free and sugar-free.

The short? Bacon should be used as a flavoring agent, not a main source of protein.
I hope you enjoy this recipe as much as I do!
