Butternut Squash "Unstuffing"

This “unstuffing” recipe will give you all the delicious components of traditional stuffing but in a Whole30 and Paleo-friendly way! The Herby Battuto Oomph is the secret ingredient to give it the perfect “Thanksgiving” feel. The butternut squash is chopped up small and resembles the feel of the bread in traditional stuffing, while the Oomph gives it all the amazing flavor. All these components mixed together are a delicious spin-off of the original and would make a wonderful side dish to any holiday meal!
I had the amazing opportunity to collaborate on a Holiday e-Cookbook with Whole's approved partner Oomph along with a few other Whole30 Coaches to create holiday recipes using their product. If you don't already know what Oomph is, it is dehydrated and milled vegetables turned into flavor combinations to add to your cooking. They add nutrition and super easy flavor to your meals! For this recipe, I used their limited edition holiday blend, Herby Battuto for this recipe. But you can also substitute No.2 Battuto and then add in some additional herbs to give it the "stuffing feel".
If you are not using the herby edition of the Battuto Oomph, then I would add in half a teaspoon of dried thyme and half a teaspoon of dried sage to give this recipe the herby flavor that the "unstuffing" needs.
I created this recipe for the e-Cookbook because I always like to bring a side dish to Thanksgiving that feels a little less "heavy" than the traditional mashed potatoes and stuffing. This recipe is full of seasonal veggies and has the perfect flavor combination with savory herbs, salty bacon, sweet dried cranberries, and caramelized onions.
